INSTRUCTIONS
Mix small portions of these together and baste over fish on grill with aluminum foil on rack. Can use this on your broiler too! Great taste ! Enjoy your grilled fish !

INGREDIENTS
  • 1/2 c. balsamic vinegar
  • 3/4 c. olive oil
  • Few drops hot pepper sauce
  • 1/4 c. minced fresh basil (or 1/8 c. dried)
  • Freshly ground pepper to taste
INSTRUCTIONS
Use with a firm fleshed fish (swordfish, mahi mahi, salmon steaks). Whisk together the vinegar, oil and hot pepper sauce. Stir in the basil. Pour over fish and marinate about 45 minutes, turning once, before grilling. The Bonefish grill recipe of basil is ready to serve....nice taste !

  • 1 1/2 c. finely diced cantaloupe or casaba melon
  • 1 1/2 c. finely diced honeydew melon
  • 1 1/2 c. finely diced crenshaw melon
  • 3 tbsp. fresh lime juice
  • 2 tbsp. chopped fresh cilantro or mint
  • 1 jalapeno pepper, seeded and minced or 1/4 tsp. cayenne

INSTRUCTIONS

CAJUN GRILLED FISH FILLETS ...a nice bonefish grill recipe to try...great !

INGREDIENTS
  • 2 lbs. orange roughy, 3/4 inch thick slices
  • 1 lg. onion, sliced 1/2 inch thick
  • 1 bell pepper, sliced 1/2 inch thick
  • 1 lg. ripe tomato, diced
  • 1 thin sliced lemon
  • Garlic powder to taste
  • Paprika

INSTRUCTIONS
Combine all ingredients (except fish) and mix in frying pan over medium heat. Place fish fillets on top of hot ingredients.
Sprinkle with garlic powder and paprika and place lemon slices on fish. Grill fillets for 10 minutes each side, sprinkling with garlic powder each time. Place lemon slices on top. The bonefish grill recipe is ready to serves 4 persons....nice !

GRILLED FISH KABOBS WITH MEDITERRANEAN SALSA

GRILLED FISH KABOBS WITH MEDITERRANEAN SALSA ...a great Bonefish Grill recipe to try ! Nice !

INGREDIENTS
  • 8 bamboo skewers, soaked in water for a at least 1 hour
  • 3/4 c. plus 2 tbsp. olive oil, divided
  • 2 tbsp. lemon juice
  • 2 tbsp. fresh parsley, washed, dried, minced
  • 1 tbsp. fresh thyme, washed, patted dry, minced or 1 tsp. dried
  • 1 lg. garlic cloves, peeled, ends removed, minced
  • Black pepper, to taste
  • 1 1/2 lbs. firm fleshed fish, such as halibut, sea bass or shark, washed, patted dry, cut into 1 1/2 inch cubes
  • Mediterranean Salsa (recipe follows)
  • 1 lemon, cut into 8 wedges, then cut in half to make 16 pieces
  • 1 red, yellow or green bell pepper, washed, cored, seeded and cut into 1 1/2 inch squares

INSTRUCTIONS
Soak skewers in water. In a large plastic bag or a medium, non reactive bowl, combine 3/4 cup olive oil, lemon juice, parsley, thyme, garlic and black pepper; stir to blend. Place fish in mixture;
toss lightly to coat. Seal or cover and marinate for 30 minutes in refrigerator.

Preheat grill. Remove fish from marinade; reserve marinade. Thread fish onto skewers alternately with lemon pieces and bell peppers.
Brush grids of barbecue with remaining 2 tablespoons olive oil. Place skewers on rack and grill, turning frequently, until fish is just barely opaque, about 8 to 11 minutes. Spoon Mediterranean Salsa on serving platter. Arrange kabobs on top. The Bonefish grill recipe is ready to serve immediately....great one !

MEDITERRANEAN SALSA:
  • 1 lg. red bell pepper, washed
  • 12 lg. basil leaves, washed, dried or 1 1/2 tbsp. dried
  • 1 lg. garlic clove, peeled, ends removed, minced
  • 1 jalapeno chili or other hot chili, washed, veins and seeds removed, finely minced
  • 4 oil packed sun dried tomatoes, drained and chopped
  • 1/2 sm. red onion, peeled, ends removed, chopped
  • 1/4 c. olive oil
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. red wine vinegar
  • Salt to taste
  • Pepper to taste
  • 2 lg. tomatoes, washed, seeded, diced
  • 3 tbsp. chopped black olives

INSTRUCTIONS
Place oven rack 5 to 6 inches from broiler element. preheat broiler.
Line broiler pan or baking sheet with foil. Place red pepper on top.
Roast on all sides until entire pepper is charred, about 15 to 20 minutes. Remove from oven and wrap the charred pepper in the aluminum foil used to line pan. Allow to rest 5 minutes. Remove foil; when cool enough to touch, remove core and seeds. Cut into a medium dice.
Using a food processor fitted with the metal blade, process basil leaves and garlic until finely chopped. Add jalapeno or other chili, sun dried tomatoes and red onion; process 10 seconds. Add olive oil, balsamic vinegar, red wine vinegar, salt and pepper; process 5 seconds. Carefully remove blade and stir in bell pepper, tomatoes and olives. May be used immediately or covered and refrigerated up to 24 hours. Makes about 2 cups. Bonefish grill recipe...!

INGREDIENTS
  • 1/2 c. (1 stick) butter
  • 1/4 c. fresh lemon juice
  • 1 tbsp. chopped fresh dill, parsley, savory or chervil or 1 tsp.
  • dried herb, crumbled - ginger
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 lb. fresh salmon, cod, or halibut steaks (1" thick)

INSTRUCTIONS
1. Melt butter in small saucepan. Add lemon juice, herb, salt and pepper for Herb-Butter Baste.
2. Place fish on well-oiled grill or in a hinged rectangular wire grilling rack. Brush fish with herb butter. Grill about 4-6 inches from gray-ashed coals 6-8 minutes. Baste with herb butter. Carefully turn; baste again. Cook another 6-10 minutes or until fish flakes when tested with a fork. Remove to serving platter; spoon remaining herb butter over steaks. Garnish with watercress, and lemon and lime slices, if you wish. The Bonefish Grill recipe of grilled fish is ready to serve...Nice !

INGREDIENTS
  • 4 (6 oz.) dense fish steaks, such as halibut, swordfish or tuna
  • 1/2 c. vegetable oil
  • 3 tbsp. soy sauce
  • 2 tbsp. med. dry sherry
  • 1 1/2 tsp. peeled and grated ginger root
  • 1 tsp. fresh grated range rind
  • Fresh ground pepper as desired
  • Oil as needed for the grill
  • Garnish as desired

INSTRUCTIONS
Arrange the steaks in a shallow glass or porcelain baking dish. Whisk the rest of the ingredients until creamy and emulsified. Pour the marinade over the fish. Marinate, covered, 2 hours or overnight turning periodically.
Heat a ridged grill until hot. Brush with additional oil and heat the oil. Grill the steaks over high heat on both sides according to thickness (about 10 minutes). You may also grill the fish over

  • 1 can (20 ounces) sliced pineapple in juice, drained, reserving juice
  • 3/4 cup reserved pineapple juice
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 2 tablespoons minced fresh cilantro
  • 1 to 2 teaspoons minced jalapeno pepper
  • 2 tablespoons Equal® Spoonful*
  • Salt and pepper to taste
  • 6 salmon, haddock or halibut steaks or fillets (about 4 ounces each), grilled

INSTRUCTIONS
Cut pineapple slices into 1/2-inch pieces. Combine pineapple pieces, reserved pineapple juice, lime juice and garlic in medium saucepan. Heat to boiling.
